Mango avocado salad and Page Arizona 


Horse shoe bend (shown above) in Arizona was better than expected. It was free to see and a very interactive walk. The Grand Canyon I didn’t feel as connected to the environment because we were walking on sidewalks rather than right on the mountain.


I know Walmart may not be the best place to shop, but it was around here and I have to say this Walmart had a really good produce selection. They had jicama, plantains, juices, 50 cent avocados, etc.


Dinner cost less than $1 to make. You literally just cut up the fruits and drizzle your dressing and mix, it takes 5 minutes and is super refreshing for the heat out in the desert. 

Avocado mango salad for one: 

1 avocado

1 mango 

1 tsp balsamic vinegar 

1 tsp olive oil

1/4 tsp salt 

A drizzle of honey or agave/maple syrup 


We also had some tacos with mushrooms, onions, peppers, beans and taco seasoning sauce. 

Finding new foods to eat that are quick, cheap and easy has been a fun journey.
