Grand Canyon featuring pasta salad 


Yesterday we spent the day at the Grand Canyon, which I learned it takes a week to hike to the bottom if you count camping time.

I attempted to fast for the day of the summer solstice and only lasted til 11:30 followed with cravings for pasta salad 


We used for veggies:

1/2 onion

1 tomatoe

1 pepper or a few mini ones 


For dressing:

Approximate not exact measurements due to lack of measuring tools: 

2 tbsp olive oil

1 tsp rice wine vinegar

1/2 lemon juice 

1/4 tsp salt 

2 tbsp sweet relish 


The sweet relish may seem a little odd but the Grand Canyon store has free sauces so we decided to grab some and try it, it actually turned out pretty good.

The pasta salad was perfect for the heat and did the fix!
