Taco Sushi (Vegan)

Taco Mix

1/4 cup walnuts

1 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

1 tsp lemon juice

3 sundried tomatoes

Sauce

1/4 cup cashews(soaked over night or not)

1 tbsp lemon juice

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

2 tbsp water

2 tsp Apple cider vinegar

a few chives

Extras

1/2 cup white rice

1 avocado

3 sea weed wraps

Instructions

Boil water and when boiled, put rice in to cook 15-20 minutesScreen Shot 2016-01-05 at 12.58.22 PM.png

In a food processor, blend together taco mix ingredients

Next, you can mix the ingredients for the sauce in the food processor after removing these and putting them in a small bowl

Put this in a small bowl aswell

When the rice is ready, you may want to put it in the fridge to cool for a bit.

Once thats over with, get out your sea weed and place on a cutting board. Then add on the rice, leaving about an inch on the top and bottom.

Now, put down your avocado and taco mix towards the middle but more towards the topScreen Shot 2016-01-05 at 12.59.16 PM.png

Starting rolling from the top, over the spot where all of the mixture is. Hold down and keep rolling. If you have it, you can use a bamboo matt or some aluminum foil.

You can begin to cut your sushi now, I had previously attempted to cut it hard with a big knife. I found that a smaller knife and very slow and patient cutting had the best out come.

    1. I’d say around 30 minutes, the taco meat is super quick aswell as the sauce. The only thing that takes more time is rolling the sushi and the rice. If you’re short on time making just a sushi burrito is lol, I will probably post a recipe of that soon 🙂
