Vegan Crumbly muffin “cheese”

This recipe is very flexible, honestly you can do whatever you feel good with for the flavors. This cheese is good to crumble on toast or add to a sandwich. I have yet to try it, but I think a chimichurri sauce on top would be really yummy.

Ingredients

1.5 cups soaked cashews

2 tbsp apple cider vinegar

2 tbsp lemon juice

2 tbsp canola oil

2 tbsp water

1/2 tsp salt

1 tbsp nutritional yeast

1/2 tsp turmeric

2 cloves garlic

Directions

Oven at 225F

Pulse all ingredients in food processor

Add ingredients to sprayed mini muffin pans, regular muffin pans, or just a pan.

Bake for 45 minutes up to 2 hours
